Paneer Curry

My Paneer Curry is so simple to make and the curry has a deep, rich flavor. I have learned that a curry can come in many forms. A CURRY originates from India and generally contains a number of herbs and spices frequently including cumin, coriander, turmeric, ginger and some chilies. But it really will vary depending on what part of India the recipe originated from.

Showing you a small sample of the variety of curries I have made including:

RED CURRY – in a pasta

PUMPKIN CURRY – a vegan dish

YELLOW CURRY – lentils

The base of my curry sauce is sauteed onions, tomatoes and garlic. The turmeric and chili powder is roasted in oil until aromatic. Then it is topped with the tomato, onions & garlic. The combination is pulsed to a silky sauce. The sauce is finished with the addition of vegetable stock and some toasted cumin and coriander that is ground in a spice blender.

Paneer Curry

Finding more ways to make Paneer for my wife makes a happy life. This paneer Curry is flavorful, warming, spicy and vegan.

Ingredients

  • 1 Package Paneer cubed
  • 1 Tbsp Ghee
  • 1 Tbsp Turmeric
  • 2 Tsp Chili powder
  • 1/2 Whole Yellow onion rough chop
  • 3 Whole Roma tomatoes rough chop
  • 1 Cup Vegetable stock
  • 2 Tsp Minced ginger
  • 2 Tsp Minced garlic
  • 2 Cups Rice

Instructions

  1. Cook the rice in your rice steamer.

    Heat the ghee in a Dutch oven on medium high heat. Add the turmeric and the chili powder and cook for one minute. Add the onions, tomatoes, garlic and minced ginger and garlic. Cook for 5 minutes until softened. Next, add the vegetable stock and cook for another 5 minutes. Using an immersion blender, blend the ingredients until smooth. Cook for another 5 minutes, and then, add the paneer.

    Serve over white rice. Enjoy!
