The Inspiration

This recipe was born the day after a big holiday gathering. We had enjoyed a beautifully roasted beef tenderloin as the centerpiece of our dinner, and while I was thrilled to have leftovers, I didn’t want to just reheat slices and call it a day. I wanted something craveable and shareable—something that could be enjoyed just as much as the original meal.

Enter: sliders.

Layers of Flavor

The star of these sliders is, of course, the tenderloin— sliced just right. But what takes them over the top is the creamy, tangy horseradish chive spread. It brings just the right punch to balance the richness of the beef, with a fresh pop from the chives and a creamy base that ties everything together.

I served mine on soft slider buns, lightly toasted for a bit of texture. You could even add arugula or caramelized onions if you want to go a step further—but honestly, they’re perfect just as they are.

Beef Tenderloin Sliders with Horseradish Cream Sauce

Sometime the best recipes are the simplest. Using a high quality meat – leftover Beef tenderloin and pairing with a horseradish chive cream sauce.

Ingredients

Horseradish Cream Sauce

  • 2 Cups Sour cream
  • 1/4 – 1/2 Cup Prepared horseradish
  • 2 Tbsp Dijon mustard
  • 30 whole Chives chopped
  • 1 Tsp Salt
  • 1 Tsp Ground black pepper

Beef Tenderloin Sliders

  • 1 Lb Beef Tenderloin leftovers sliced
  • 12 Whole Hawaiian roles sliced

Instructions

Horseradush Cream Sauce

  1. Begin by combining all ingredients in a bowl Set aside

Beef Tenderloin Sliders

  1. Take the hawaiin rolls and bake in a 325 degree oven for 2 minutes. Next, lather the bottom bun with a heaping spoon of the horseradish cream sauce. Place a good slice of the beef tenderloin on the sauce. Cap the sandwich with the top bun.

    Serve and enjoy!
