Easy Vegan Tofu Butter Masala

There’s something incredibly comforting about a warm bowl of butter masala—rich, creamy, spiced just right. And when you can make it vegan, veggie-loaded, and weeknight-easy? That’s a win all around.

This Vegan Tofu Butter Masala came together thanks to a little shortcut I stumbled across: a pre-made vegan butter chicken masala sauce that’s packed with bold Indian spices, without the dairy and meat. With that flavor foundation ready to go, all I had to do was build the dish around it—and it turned out so satisfying, I had to share!

The Star Ingredients

Instead of chicken, I used tofu—crumbled and baked off in the oven to dry out and get a little crisp on it. It soaks up the masala sauce beautifully, becoming tender and flavorful in every bite.

To boost the nutrition and add more texture, I loaded the dish with a colorful medley of vegetables: cauliflower florets, green beans, carrots, and red cabbage. The mix not only makes the dish more filling and hearty, but it also adds that perfect balance of sweetness, crunch, and earthiness.

Easy Vegan Butter Masala

My Easy Vegan Butter Masala is healthy, loaded with veggies and comes together so fast by using a prepared vegan butter masala sauce.

Ingredients

  • 1 Package Tofu shredded
  • 1 Head Cauliflower cut into florets
  • 1/4 Head Red cabbage sliced
  • 1/2 Lb Green beans
  • 1/4 Lb Carrots cut in matchsticks
  • 1 Whole Red pepper cut in slices
  • 1 Jar Vegan butter masala
  • 1/2 Cup water or vegetable stock
  • 3 Tbsp Avocado oil divided

Instructions

  1. Begin by shredding the tofu into chunks. Rub with 1 tbsp avocado oil and indian spice mix. Bake in a 375 degree oven for 30 – 40 minutes. At the same time, rub the cauliflower florets with the remaining oil. Bake for 20 – 30 minutes until you get some char.

    Take the final tbsp of avocado oil and add to a skillet on medium high heat. Add in the jar of vegan butter masala. Next, add in the veggies and simmer for 5 minutes. Now, add in the tofu and the cauliflower and simmer for another 5 minutes. Add in the water/stock to get the desired level of sauce.

    Serve with rice and enjoy!
