Hominy Black Bean Salad from Feed Your Soul Too

There are some recipes where you just want to taste the ingredients as GOD had intend them to taste.  My Hominy Black Bean Salad is just one of those recipes.  The dressing is fresh squeezed lime.  That is all the recipe needs.  Combined with spices and fresh cilantro, the recipe is bursting with flavor.  It also has great texture from the crunch of the peppers to the creaminess of the black beans.

Hominy Black Bean Salad

I was looking for another hominy recipe because I bought a couple of cans of hominy.  The first recipe I made with the hominy was a HOMINY SMOKED SAUSAGE CHEESY CASSEROLE.  One other recipe that I used hominy in was my JERK CHICKEN WITH PINEAPPLE SALSA.  The hominy was actually served as a side dish in a curry sauce.  It was amazing and I am remembering that I need to make this dish again.

What exactly is HOMINY?  Hominy is made from corn kernels.  The kernels are soaked in a alkali solution.  Doing so removes the hull and germ of the corn.  The corn itself then doubles in size and that’s it. 

It is winter here in Chicago, so the only ingredient in this dish that I used that was not fresh was the corn.  I used orange and yellow peppers for color and jalapenos for some kick.  I used the red onion for sweetness and the tomatoes for some acidity and tartness.  The texture came from the hominy and the black beans.  The recipe was finished off with spices and fresh cilantro.  It is that easy.  No cooking necessary.

Hominy Black Bean Salad

Working with thre freshest ingredients can make for a simple and tasty recipe as is the case with this hominy black bean casserole.

Ingredients

  • 29 Ounces White Hominy
  • 29 Ounces Black Beans
  • 1/2 Whole Orange & Yellow pepper diced
  • 2 Whole Jalapenos diced
  • 1/2 Whole Red Onion Sliced
  • 1/2 Pint Grape Tomatoes halved
  • 1/4 Bunch Cilantro rough chop
  • 5 Ounces Yellow corn
  • 1 Whole Lime zest & juice
  • 2 Tsp Adobo Seasoning
  • 2 Tsp Lemon Pepper
  • 1 Tsp Cumin
  • 1/4 Cup Red Wine Vinegar
  • 2 Tbsp Grenadine
  • 1 Tbsp Sugar

Instructions

  1. Begin by combining the red wine vinegar, grenadine and sugar.  Mix well and add the red onions.

    Start assembling the salad with the hominy and the black beans.  Next, add all of the peppers, the the spices and tomatoes.  Add the cilantro and the pickled red onions.  Finish by adding the lime zest and 1/2 of the juice of the lime.  Mix well.

    Serve and enjoy!

    This salad is simply delicious! I substituted pre made pico instead of adding the individual components (only because I already had it and it needed to be used). I served it with smoked sausage and baked and smashed Yukon gold potatoes. Amazing Meal!
