Healthy Gluten-Free Asian Tofu Noodles
My Healthy Gluten-Free Asian Tofu Noodles have it all. It is a healthy dinner with a bit of spice and sweetness and texture.
Ingredients
- 1 Package Tofu pressed & cut in 2" squares
- 1/4 Cup Rice flour
- 16 Ounces GF rice noodles
- 1 Jar Thai red pepper paste
- 1 Can Coconut milk
- 1/4 Whole Red onion sliced
- 1/4 Whole red, green & yellow bell pepper sliced and halved
- 2 Stalks Lemongrass white ends chopped
- 1/4 Head Red cabbage sliced
- 3 – 4 Leaves Swiss chard rough chop
- 2 Tsp Vegetable oil
Instructions
Tofu & Noodles

Begin by pressing the tofu for 30 minutes to get out the liquid. Dredge in rice flour and fry in a skillet to a golden brown. Cook the noodles according to the box instructions. Set aside.
Thai Red Pepper Sauce

In a skillet, mix the red pepper sauce and the coconut milk. Stir until fully combined. Set aside.
Asian Tofu Noodles

Heat oil in a wok. Add in the onions and peppers and cook for 2 – 3 minutes. Next, add in the garlic, ginger and lemongrass. Cook for 1 – 2 minutes. Pour in the red pepper sauce and mix well.
Now, add in the noodles mixing well. Finish by adding in the red cabbage and swiss chard and cook for 2 minutes.
Serve and enjoy!
