Begin by pressing the tofu for 30 minutes to get out the liquid. Dredge in rice flour and fry in a skillet to a golden brown. Cook the noodles according to the box instructions. Set aside.
In a skillet, mix the red pepper sauce and the coconut milk. Stir until fully combined. Set aside.
Heat oil in a wok. Add in the onions and peppers and cook for 2 - 3 minutes. Next, add in the garlic, ginger and lemongrass. Cook for 1 - 2 minutes. Pour in the red pepper sauce and mix well.
Now, add in the noodles mixing well. Finish by adding in the red cabbage and swiss chard and cook for 2 minutes.
Serve and enjoy!
