Gochujang Tofu Meatballs

My Gochujang Tofu Meatballs are a flavor bomb. This dish a heatlhy, hearty and so versatile filling with your veggies of choice.

Ingredients

  • 1 Package Firm tofu
  • 2 Tbsp Gochujang
  • 1/2 Cup Gluten free breadcrumbs
  • 1/4 Cup Soy sauce
  • 2 Cloves Garlic minced
  • 2 Inch Ginger minced
  • 1 Cup Parsley chopped
  • 2 Whole Green onions diced

Instructions

  1. Begin by shredding the tofu. In a mixing bowl, add the rest of the ingredients and mix well. Using your hands, form palm size balls with the tofu and place on a baking tray.

    Place in a 375 degree oven and bake for 35 – 40 minutes.

    I added a gochujang tomato sauce to add top the meatballs in my dish. I served the meatballs over rice noodles with red bell peppers, baby corn, cabbage and shredded corn.
