GF Black Bean Cauliflower Veggie Burger

I was going to call this veggie burger a black and tan but then I was thinking people would think this is a drink.  The inspiration for this GF Black Bean Cauliflower Veggie Burger is my current LOVE of all things cauliflower.  I totally enjoy playing with this ingredient.  It is so versatile as evidenced by this CAULIFLOWER BREAD GRILLED CHEESE or this BUFFALO CAULIFLOWER or this MUSHROOM LEEK PASTA WITH CAULIFLOWER SAUCE.

GF Black Bean Cauliflower Veggie Burger

When I think of recipe ideas, I not only think about flavor but I am thinking what it will look like on the plate. The only challenge with this idea is trying things that I have never made before so you do not know exactly how it will turn out.  In this case, the question was how to make the burgers so you could see the layers.  As you can see, I had a ring I used.  I wanted to be sure the burger would stay together.  My ring was a little small but it did enable me to pack each component densely and then press it down after it came out of the mold.

The other key to a recipe this GF Black Bean Cauliflower Veggie Burger is that each veggie burger component needs to stand on its own.  The black beans are strong, both in flavor and texture, so they need bold flavors added to it.  I used fresh ingredients like cilantro and peppers and my favorite spice – smoked paprika.  And for the cauliflower burger I used two kinds of cheese including a smoked gruyere and a chipotle cheese.  This recipe has a Mexican flair to it but I would not say it is totally Mexican.

Ingredients

Black Bean Burger

  • 2 Cans Black Beans
  • 1/4 Whole Red Pepper diced
  • 1/4 Whole Green Pepper diced
  • 2 Slices Red Onion diced
  • 2 Tsp Cumin
  • 2 Tsp Smoked Paprika
  • 1 Tbsp Adobo Seasoning
  • 2 Tsp Black Pepper
  • 2 Tbsp Cilantro chopped
  • 2 Tbsp GF Bread Crumbs

Cauliflower Burger

  • 1 Head Cauliflower
  • 2 Whole Eggs
  • 1/2 Cup Smoked Gruyere shredded
  • 2 Slices Chipotle Cheese shredded
  • 2 Tbsp Coconut Oil

Cilantro Sauce

  • 1 Bunch Cilantro
  • 1/4 Cup Fat Free Plain Greek Yogurt
  • 2 Tbsp Sour Cream
  • 2 Tsp Salt
  • 2 Tsp Black Pepper

Instructions

Black Bean Burger

  1. Mash the black beans and combine with the rest of the ingredients. Using a ring, form into a patties. 

Cauliflower Burger

  1. Cut the cauliflower into florets.  Par cook the cauliflower in a double boiler.  Once soft, 3 - 4 minutes, pour cold water over it to stop the cooking process.  Working in batches in a food processor, pulse until the cauliflower is broken down.

    Combine with the remaining ingredients.  Using the ring, push the cauliflower in, top with black bean burger, and then, another layer of the cauliflower burger.     

Cilantro Sauce

  1. Add all ingredients to a blender.  Blend until smooth.

Final Cooking

  1. Heat a skillet on medium high heat.  Add the oil, and  once shimmering, add in the burgers.  Cook 3 - 4 minutes per side.  Serve with a cilantro sauce.

    Enjoy!

    I think you SHOULD call it a black and tan. It sounds delicious. At the very least, I’ll have a black and tan with it.
