3 Chicken Milanese-Inspired Meals You’ll Want on Repeat

There’s something about crispy, golden chicken cutlets that never gets old. Chicken Milanese is one of those recipes that feels elevated enough for a restaurant-style dinner but is simple enough to make at home. It’s versatile, satisfying, and can easily transform into multiple completely different meals.

Recently, I shared three Instagram reels featuring one of my favorite crispy chicken preparations used in three delicious ways: a classic Chicken Milanese served with peppery arugula and lemon, a comforting Chicken Parmesan, and a Chicken Milanese Caesar Salad Sandwich layered onto homemade ciabatta with homemade Caesar dressing.

1. Classic Chicken Milanese with Arugula and Lemon

The first recipe is all about simplicity. Crispy breaded chicken is served over a fresh bed of peppery arugula and finished with fresh lemon.

This might be my favorite transformation of all.

For the final recipe, I turned Chicken Milanese into a hearty Caesar salad sandwich layered onto homemade ciabatta rolls.

The sandwich combines crispy chicken, crunchy romaine, homemade Caesar dressing, parmesan, and fresh bread for the ultimate texture and flavor combination.

Ingredients

  • 6 Whole Chicken breasts halved horizontally
  • 1 1/2 Cups Gluten free flour
  • 4 Whole Eggs beaten
  • 2 Cups Gluten free panko breadcrumbs
  • To taste salt
  • To taste Black pepper
  • 1/2 – 1 Cup Avocado oil

Instructions

  1. Begin by slicing the chicken breasts horizontally. Then, with a mallet, pound the breasts to 1/4" thickness. Season the breasts with salt and pepper.

    Set up your breading stations. First, put each breast in the flour. Shake off the excess. Then, move it to the egg wash. Cover completely and let the excess drip off. Now, add to the breadcrumbs. Cover well and press down to ensure the breadcrumbs fully adhere to the chicken.

    Heat the oil in a skillet. Once at 325 – 350 degrees, add the breasts and cook 2 – 3 minutes per side. Remove from the pan and let drain on a rack. Complete the pan frying with all the breasts. To finish cooking, place in a 275-degree oven and cook for approximately 10 minutes. They are now ready to serve.
