GF Hatch Chili Cheese Polenta

The inspiration for this GF Hatch Chili Cheese Polenta was the hatch chili cheese.  It is so good.  I have used hatch chilies for a couple of recent recipes including my SMOKED STUFFED MEATLOAF and this HATCH CHILI GRILLED CHEESE.  I think we think that hatch chilies are hot.  They can be but there are different varieties.  Do you know how they got there name?  Because they are from HATCH, AZ, or more specifically from the Hatch Valley, of course.

GF Hatch Chili Cheese Polenta

I did some research to fully understand what POLENTA is and learned some interesting facts from The Spruce and from Serious Eats.  Polenta is made from a special grade of cornmeal originating from Italy.  There are a number of varieties and colors of cornmeal.  Simply, it is ground corn.  The Southern staple known as grits is actually made from hominy.  Hominy has the corn soaked in an alkaline product, usually lime to more easily remove the hull which makes it softer and creamier.

This GF Hatch Chili Cheese Polenta recipe could not come together any easier.  The important thing when making polenta is to be patient.  It will take at least 30 minutes, and probably longer to come together.  Do not rush this step.  You only need to use water and the cornmeal.  You can certainly use stock or even coconut milk if you wish to deepen the flavor or make the texture creamier.  Since, I was adding the cheese I used mostly water and a little coconut milk.

GF Hatch Chili Cheese Polenta

Take your traditional Italian polenta to the next level by adding a cheesy kick with these GF Hatch Chili Cheese Polenta and creating a fusion of flavors.

Ingredients

  • 1 Cups Cornmeal
  • 4 Cups Water
  • 1 Cup Coconut Milk
  • 1 Cup Hatch Chili Cheese shredded

Instructions

  1. Heat the water on medium high eat and add the conrmeal slowly.  Keep stirring until all the cornmeal is added and bring to a boil.  Add in the coconut milk and keep stirring.  Turn heat down to medium heat and stir frequently.

    In the last 3 minutes of cooking, add the cheese.  Cook and stir until it melts. 

    Serve and enjoy!
