Cucumber Salad

This cucumber salad has become one of my favorite and the men in my family love this dish too.  With my Spiralizer, this is easy so to make.  The cucumber and onions get marinated in the mayonnaise based sauce.  This cucumber salad is rich and at the same time has the tartness of the cucumber.  It also picks up the sweetness of the onion.  It is so simple to put together.  This salad is even better to put together a day ahead and let the flavors meld together.

Ingredients:

  • 1 cucumber
  • 1/3 of a red onion
  • 1/4 cup mayonnaise
  • 2 – 3 tsp of sugar
  •  2 tbsp vinegar
  • 2 tbsp olive oil
  • salt & pepper to taste

Directions:

Use your Spiralizer to prepare the cucumber and the red onion.

Place in a bowl.  In a separate bowl, combine the rest of the ingredients.  Mix well. Combine all the ingredients together in one bowl, cover and refrigerate.  I made this recipe a day ahead.  Take out of the fridge some 20 minutes before serving.  Mix again.
