The inspiration for this dish is my love of white pizza.  I think the first place that I tried a white pizza was at Ruggero’s.  RUGGERO’S is a pizza restaurant in Flint, Michigan.  My wife is from Flint and her family has been going to this restaurant for some 50 years.  I am a Chicagoan, and let me tell you, this pizza gives Chicago a run for its money.  We know the owners because we have been going there for so many years. They have given me the chefs tour of the kitchen and Susie told me to try their white pizza.  I have it every time I am there now.  It is so good.

White Garlic Mozzarella Pizza

A couple weeks earlier, I posted a recipe for a SEMI HOMEMADE VEGGIE PIZZA.  The dough made 2 pizzas.  I froze the 2nd half of the dough waiting for another evening.  This night was that evening.  The learning for this recipe is quite simple – LAYERS.  Layers of flavors.  The flavors are built with garlic, oregano, mozzarella, mushrooms, red onions, spinach and mozzarella added.  The vegetables are put on raw.  So the baking process cooks them a little but the veggies retain their texture.  I believe this is a real key for this pizza.

If you have not tried a white pizza, you need to give this White Garlic Mozzarella Pizza a try.  What makes this pizza so good as that you can taste all the ingredients.  Without the tomato sauce, the pizza flavor is really made up of all the different veggies on this pizza.  The garlic is applied liberally.  Two types of mozzarella cheeses are used on this pizza.  Shredded mozzarella is applied twice and nice thick pieces of fresh mozzarella are placed on top.  The way the fresh mozzarella melts makes this pizza both in taste and look.

Ingredients

  • 1 Package Wheat Pizza Dough
  • 2 Tbsp Minced Garlic
  • 8 Ounces Shredded Mozzarella divided
  • 4 Ounces Fresh Mozzarella sliced
  • 1/4 Whole Red Onion rough chop
  • 3 Ounces Fresh Spinach
  • 4 Ounces Bella Mushrooms
  • 1 Tbsp Oregano

Instructions

  1. Dust a surface with flour and roll out the dough to a 12" circle.  Pre-heat your oven to 450 degrees.

Start adding the ingredients one at a time beginning with the minced garlic and the oregano.  Next, add half the shredded mozzarella followed by the spinach, red onions and mushrooms.

Finish by topping with the rest of the shredded mozzarella and placing the sliced fresh mozzarella evenly around the pizza.

Place in the oven for 12 - 14 minutes.  Keep your eye on the pizza looking to get a good melt and a good crust.  We like our pizzas crispy so we are looking for a little bit of browning.

    Serve and enjoy!
