This dish can be found on a lot of Italian menus, and I have found they all do it a little differently. One of my favorites restaurants in Chicago that makes this signature dish is TUFANO’S VERNON PARK TAP. There lemon chicken is cooked straight while my recipe – this time – was dredged in flour. For me, the dredging enables the chicken to hold on to even more of the flavor.

Ultimate Lemon Parmesan Chicken
Ultimate Lemon Parmesan Chicken is a classic Italian dish developed over the years from the abundance of lemons that were grown in Italy.
Ingredients
- 3 Whole Chicken breasts halved horizontally
- 2 Whole Lemons
- 1/4 Cup Chicken stock
- 3 Cloves Garlic smashed
- 2 Sprigs Thyme
- 1/4 Cup Grated parmesan
- 1/2 Cup All-purpose flour
- 2 Tsp Salt
- 2 Tsp Lemon pepper
- 1/4 Cup Olive oil
Instructions

Begin by cutting your chicken breasts in half horizontally. Next, covering with plastic wrap, pound them to about 1/4" thick. Season with the salt and lemon pepper.
In a bowl, mix together the flour and parmesan. Dredge the chicken filets coating evenly on both sides.
Heat the oil on medium high heat. Add the coated chicken breasts to the pan and cook 2 minutes on each side. Now squeeze in the lemon juice and add the stock, smashed garlic and thyme to the pan. Cover with a lid and cook for 10 minutes. Remove the lid, and with a spoon, start ladling the sauce over the chicken. Repeat for 2 – 3 minutes flipping the chicken halfway through.
