
Ultimate Lemon Parmesan Chicken is a classic Italian dish developed over the years from the abundance of lemons that were grown in Italy.
Begin by cutting your chicken breasts in half horizontally. Next, covering with plastic wrap, pound them to about 1/4" thick. Season with the salt and lemon pepper.
In a bowl, mix together the flour and parmesan. Dredge the chicken filets coating evenly on both sides.
Heat the oil on medium high heat. Add the coated chicken breasts to the pan and cook 2 minutes on each side. Now squeeze in the lemon juice and add the stock, smashed garlic and thyme to the pan. Cover with a lid and cook for 10 minutes. Remove the lid, and with a spoon, start ladling the sauce over the chicken. Repeat for 2 - 3 minutes flipping the chicken halfway through.
