There’s something magical about the flavors of the Caribbean. Every bite is a mix of fresh ingredients, bold spices, and comforting textures that make you feel like you’re enjoying a meal by the sea. Today, I’m sharing my recipe for Caribbean Spiced Cod in Gravy, a dish that perfectly embodies the vibrant and rustic flavors of the islands.

The Caribbean is known for its plentiful seafood, thanks to the warm tropical waters that surround the islands. From snapper and mahi-mahi to lobster and shrimp, the region is blessed with an abundance of fresh fish and shellfish. Cod is a common catch and is loved for its mild flavor, flaky texture, and ability to pair beautifully with bold Caribbean spices. This makes it the perfect base for our spiced cod recipe.

A Flavorful Caribbean Spice Blend
For this recipe, I used Igotchu Caribbean seasoning, a blend of spices that captures the authentic taste of the islands. It adds just the right amount of heat and depth to the cod without overpowering its delicate flavor. The spice mix typically includes ingredients like allspice, thyme, garlic, paprika, and cayenne, bringing warmth and earthiness to the dish.
The Richness of the Roux-Based Gravy
At the heart of this dish is the gravy, which begins with a classic roux. The roux adds a smooth, velvety texture to the sauce, creating a comforting base for the cod to rest in. From there, I add traditional Caribbean vegetables and herbs, like onions, bell peppers, tomatoes, and fresh thyme, which give the gravy a bright, aromatic flavor. The roux acts as the perfect backdrop for these ingredients, allowing the cod and spices to shine.

Begin by heating the oil in a Dutch oven. Once shimmering, add in the flour. Stirring frequently, make sure the flour absorbs all the oil. Cook until you get to a caramel type color. At this point, I added in all my vegetables and let them simmer for 10 – 15 minutes.

Begin by patting the cod fillets dry with a paper towel. Season both sides liberal with the Caribbean seasoning. Then, lightly dredge the fillets in the gluten free flour. In a skillet, add the oil on medium high heat until shimmering. Add the cod fillets (you will need to cook in a couple of batches). Cook 2 – 3 minutes per side. You will know the cod is done when it looks like it is just starting to break apart.
To serve, fill your bowl with as much gravy as you enjoy. Top with the cod and enjoy!
