I always look to get extra uses out of the items I smoke on the smoker. Â If you have ever smoked a chicken, you have to try to make stock with it. Â It creates such a good flavor. Â So I used about 1/2 a smoked chicken and the bones of another chicken; through it in a big pot and put in the traditional stock items with a smoke spin. Â I let the soup sit for a day and rendered off the fat and then warmed and added my curry, turmeric and coconut milk and put a nice twist on the classic.
Recipe
Smoked Chicken Curry Soup:
- I had smoked 2 chickens. Â I reserved 1/2 of one chicken and then put this one and the bones of the other one in a stock pot
- I added at least 10 cups of water, 6 celery stalks, 20 plus baby carrots and 2 yellow onions quartered; 3 tsp each salt, pepper and smoked paprika; Â bring to a boil, reduce heat and let simmer for a couple of hours.
- Let cool and put in the fridge overnight so you can render the fat before cooking again
- Pull the chicken of the bones and return to pot and bring to a boil and reduce to a simmer
- Add 4 – 5 tbsp of curry powder, 3 – 4 tbsp of turmeric, 2 tsp each of salt and pepper and continue simmering until you are ready to eat
