All recipes need good ingredients to be successful. The point is, we cooks often have a pretty fair number of ingredients in the dishes we make. This vegan recipe has two vegetables simply spiced and topped with a tahini dressing. The flavors are amazing and the dish is good hot or cold.

There are certain vegetables that are so enhanced by simply roasting them. Roasting means sticking them in the oven. Butternut squash is a multi-purpose vegetable that has so much flavor all by itself. My daughter loves to use butternut squash to make a vegan macaroni N cheese. Some recipes that I have made that shows its versatility include:

To me, the biggest thing about creating this recipe is cutting the vegetables. The red onions are quartered. It is important that the onions are cut larger so they cook similarly to the squash. I also like the way they look. The butternut squash is cut in long wide quarters. Each of the vegetables are placed on a baking tray, drizzled with olive oil and spiced with sumac. It is that simple. Then, they go in the oven. The dish is finished off by making a dressing with lemon and a tahini base.

Roasted Butternut Squash with Tahini Dressing
A vegan recipe of roasted vegetables that is so simple to make yet packs a deep flavor – Roasted Butternut Squash with Tahini Dressing.
Ingredients
Butternut Squash
- 1 1/2 Whole Butternut Squash cut in sections
- 2 Whole Red onions quartered
- 1 Tbsp Ethiopian spice blend
- 1 Tbsp Sumac
- 2 Tbsp Middle Eastern olive oil certainly use what you have
Tahini Dressing
- 1/8 Cup Tahini
- 1/2 Whole Lemon juiced
- 3 Cloves Garlic minced
- 1/4 Cup Middle Eastern olive oil
- 2 Tsp Coarse Hawaiian red sea salt any sea salt will do
Instructions

Begin by prepping your vegetables. Quarter the onions and cut the butternut squash in half and then quarter as well. Place on a baking tray. Drizzle with the olive oil followed by 2/3 of the spices. Rub well coating the veggies. Place in a 350 degree oven and cook for 30 – 45 minutes. Cook until the veggies are tender.
Meanwhile, prepare the tahini dressing. Combine all the ingredients in a jar. Shake well to combine.
For serving, drizzle on the remaining spices and the tahini dressing. Enjoy!
