
A vegan recipe of roasted vegetables that is so simple to make yet packs a deep flavor - Roasted Butternut Squash with Tahini Dressing.
Begin by prepping your vegetables. Quarter the onions and cut the butternut squash in half and then quarter as well. Place on a baking tray. Drizzle with the olive oil followed by 2/3 of the spices. Rub well coating the veggies. Place in a 350 degree oven and cook for 30 - 45 minutes. Cook until the veggies are tender.
Meanwhile, prepare the tahini dressing. Combine all the ingredients in a jar. Shake well to combine.
For serving, drizzle on the remaining spices and the tahini dressing. Enjoy!
