My Piri Piri Chicken is so easy to make and packs a really good punch. The dish as African roots and was popularized in Portugal.
Ingredients
- 1 Whole Red Bell Pepper rough chop
- 1 Whole Yellow onion rough chop
- 1 Tbsp Canola oil
- 2 Tbsp Piri Piri seasoning
- 2 Tsp Smoked paprika
- 2 Tsp Spanish paprika
- 8 Whole chicken thighs
Instructions

Begin by adding the spices and oil to the peppers and onions. Massage the ingredients into the vegetables. Place in a 350 degree oven for 30 – 40 minutes.
After the peppers and onions have cooled a little bit, add them to a blender and blend into a paste. Cover the chicken thighs with a good amount of the sauce. Take the remaining sauce and simmer in a pot.
Place the chicken in the 350 degree oven and bake for 30 – 40 minutes. Baste with the piri piri sauce a couple of times during the cooking.
Serve over gluten free orzo. Enjoy!
