
My Piri Piri Chicken is so easy to make and packs a really good punch. The dish as African roots and was popularized in Portugal.
Begin by adding the spices and oil to the peppers and onions. Massage the ingredients into the vegetables. Place in a 350 degree oven for 30 - 40 minutes.
After the peppers and onions have cooled a little bit, add them to a blender and blend into a paste. Cover the chicken thighs with a good amount of the sauce. Take the remaining sauce and simmer in a pot.
Place the chicken in the 350 degree oven and bake for 30 - 40 minutes. Baste with the piri piri sauce a couple of times during the cooking.
Serve over gluten free orzo. Enjoy!
