Paneer Stuffed Indian Chicken

Recipes can be part resourceful and part creativity. My Paneer Stuffed Indian Chicken is both.

The resourceful part of this recipe is the adapting my masala paste into a tomato sauce. The creativity was coming up with an idea using the masala sauce in an Indian dish. I can guarantee you that you will never see this recipe in any Indian cookbook. The concept was so good and the dish was as much fun to make as it was to eat. Now, my wife and I love Indian food. Indian food was the ethnic food that took me the longest to master. Master may be a bit strong but I have gotten very comfortable with developing Indian dishes. My wife and my kids approve. One of my go to vegetarian/vegan recipes is my Masala Lentils (see above link for recipe). When I make this recipe, there is always leftover masala paste. I use 1/2 of the paste in my lentils. The night I created my Indian dinner, I also used, but did not finish some tomato sauce. So my idea started while putting away my leftovers. I combined the masala paste and the tomato sauce. I knew I was making something with a spicy tomato sauce.

The recipe is fairly easy to create. It begins by spicing and browning the chicken. Remove the chicken from the skillet, and once cool enough to handle, stuff with the paneer cheese. Return the chicken to the skillet and add the masala sauce. Add some chicken stock and the okra. Place in the oven and cook until the chicken is cooked through. It is that easy. I served the masala stuffed chicken over saffron rice.

Paneer Stuffed Indian Chicken

Recipes are part creativity and part resourceful. My Paneer Stuffed Indian Chicken is totally unique and takes advantage of leftovers.

Ingredients

  • 4 Whole Chicken breasts slit in the middle
  • 8 Ounces Paneer cut in slices
  • 12 Ounces Leftover masala tomato sauce see note
  • 1 Tbsp Turmeric
  • 2 Tsp Salt
  • 2 Tsp Ground Black pepper
  • 2 Tsp Ground cumin
  • 2 Tsp Olive oil
  • 12 Ounces Frozen okra

Instructions

  1. Begin by patting dry the chicken breasts. Cut a hortizonal slit in the breasts so that the cheese can be stuffed in. Apply the spices to both sides of the chicken. Heat a skillet on medium high heat and bring the oil to a simmer. Add in the chicken and cook for 2 – 3 minutes per side to get some browning. Remove from pan.

    Heat an oven to 350 degrees. Stuff the chicken with the paneer and add to the oven. Add the stuffed chicken and the masala tomato sauce to the skillet. Cook for 30 – 40 minutes until the chicken is cooked through. In the last 10 minutes of cooking, add in the okra.

    Serve over rice and enjoy!
