Paneer Stuffed Indian Chicken

Ingredients

  • 4 Whole Chicken breasts slit in the middle
  • 8 Ounces Paneer cut in slices
  • 12 Ounces Leftover masala tomato sauce see note
  • 1 Tbsp Turmeric
  • 2 Tsp Salt
  • 2 Tsp Ground Black pepper
  • 2 Tsp Ground cumin
  • 2 Tsp Olive oil
  • 12 Ounces Frozen okra

Instructions

  1. Begin by patting dry the chicken breasts. Cut a hortizonal slit in the breasts so that the cheese can be stuffed in. Apply the spices to both sides of the chicken. Heat a skillet on medium high heat and bring the oil to a simmer. Add in the chicken and cook for 2 - 3 minutes per side to get some browning. Remove from pan.

    Heat an oven to 350 degrees. Stuff the chicken with the paneer and add to the oven. Add the stuffed chicken and the masala tomato sauce to the skillet. Cook for 30 - 40 minutes until the chicken is cooked through. In the last 10 minutes of cooking, add in the okra.

    Serve over rice and enjoy!
