Asparagus Cheese Stuffed Chicken topped with Piquante Sauce

Do you prefer the main ingredients or are you a sauce person.  I really like the cool combination of ingredients for the main protein but I am all about the sauce.  And you!

Asparagus Cheese Stuffed Chicken

I really got into sauces because of my love of BOBBY FLAY’S RECIPES and watching him on cooking shows.  His knowledge of spices is amazing and he always whips up a sauce.  I am so into the sauce.  It just makes the whole dish.  A sauce really completes the whole dish.  The piquante sauce on this chicken is so, so good.  The sauce is like a pesto but the piquante peppers replace the basil.

Asparagus Cheese Stuffed Chicken

The Asparagus Cheese Stuffed Chicken is quite easy to put together.  Cooking this dish took two steps because I par cooked the asparagus before assembling the stuffed chicken.  The chicken is butterflied so the cheese and asparagus can be added into the middle before putting the dish in the oven.  The cooking method is very similar to my SALMON method.  Sear in a cast iron skillet and add to the oven for even cooking.

I have written before that we eat a lot of chicken in my house because of my wife and that is fine by me.  The flavors and spices really rise to the top when using chicken.  A few of my favorite chicken dishes include this MIDDLE EASTERN RECIPE.  How about this GLUTEN FREE GUMBO.  One final idea is this Mexican recipe for STUFFED CHICKEN FAJITAS.  Look at that – chicken crossing the globe – from the Middle East to Mexico to New Orleans.

Asparagus Cheese Stuffed Chicken

Dress up your chicken with a piquante sauce or have fun by stuffing it. My asparagus cheese stuffed chicken has great flavor and great color.

Ingredients

  • 6 Whole Boneless skinless chicken breasts
  • 1 bunch Asparagus
  • 3 Ounces Mozzarella sliced
  • 2 Ounces manchego sliced
  • 2 Tsp Seasoned Salt
  • 2 Tsp Lemon Pepper
  • 1 Tbsp Olive Oil divided

Piquante Sauce

  • 6 Ounces Piquante peppers
  • 1 Ounce Capers
  • 1/4 Cup Olive oil
  • 2 Ounces Pine nuts
  • 3 Ounces Shaved Mozzarella
  • 1 Ounce Grated Parmesan

Instructions

Piquante Sauce

  1. Place all the ingredients in the blender except for the oil. Blend until everything is combined. Now, slowly drizzle in the oil until the sauce becomes thick.

  1. Begin by drizzling the asparagus with olive oil and bake at 325 degrees for 6 - 8 minutes. While the asparagus is cooking, slit the breast in half but not all the way through. Add the sliced cheeses and the asparagus in the slit of the chicken breast. Spice both sides of the breasts.

    Heat the remaining oil in a cast iron skillet. Once hot, add the chicken and cook on high heat searing each side for 2 - 4 minutes. Place in 325 degree oven and cook for 30 minutes.

    Let rest for 5 minutes. Serve and enjoy!
