The recipes have given me some good insight into developing complete main courses. The tips piece of it have really helped round out my knowledge in the kitchen.

It is also nice to make some easy dishes every so often. My wife said to me yesterday “why don’t you find time to sit down. You spend all day in the kitchen.” She knows how much I love it. She meant it with sensitivity. See honey, I can make a quick recipe.

I just searched my blog to find some easy recipes that were really good. I do not have many but I do have some I like.

Gordon Ramsay Chicken & Peaches
Making a flavorful and easy copy cat recipe after binge watching his videos. I made his Gordon Ramsay Chicken and Peaches.
Ingredients
- 4 Whole Chicken breasts
- 4 Whole Peaches sectioned
- 1/4 Cup Cinnamon peach preserves
- 1 Tbsp Lemon pepper
- 2 Tsp Ground cumin
- 1 Tsp Allspice
- 1 1/2 Tsp Ground Ginger
- 1 Cup Chicken stock
- 2 Tsp Olive oil
Instructions

Mix all the spices and apply to the chicken breasts. Heat the oil in a Dutch oven. Once the oil is shimmering, add the chicken breasts and cook approximately 3 minutes per side.
Next, add the stock and cover the pot. Simmer for 15 – 20 minutes. Add the preserve and the peaches and simmer for 5 more minutes. Using a spoon, ladle the preserve stock over the chicken.
Serve over rice with plenty of the sauce. Enjoy!
