Pasta dishes are the perfect vehicle for fusion.  Pasta brings texture and serves as a vessel for any flavor you wish to bring. My Gluten Free Mexican Sausage Pasta is loaded with flavors and textures.

One thing I have learned cooking with gluten free pasta is you have to careful not to overcook it.  When gluten free pasta is overcooked it tends to disintegrate.  You definitely want to cook the pasta al dente and finish the cooking in the pan with the sauce.  The other key in a dish like this is to make sure you sauté the turkey sausage first.  Grill in its whole form, and then, finish the sautéing as slices so a good char is achieved.  Then, you add the onions to pick up all the flavor left in the pan.

I mentioned above about pasta being such a good vessel for a fusion dish.  I have made plenty of recipes hailing from different areas of the world.  I love this YELLOW CURRY PASTA that obviously comes from India.  How about this CHICKEN SHAWARMA PASTA which plays on Middle Eastern flavors.  Or what do you think of this CREOLE PASTA BAKE which draws on New Orleans for its origins.

It is important in so many dishes that are layered that one adds flavor at each step.  To make the dish, begin by sautéing the sausage.  This step not only chars the sausage but leaves great flavor on the pan bottom.  Next follows the addition of the onions.  Sautéing the onions picks up all the flavor from the pan.  The peppers are added next to soften.  Now the tomato sauce is added and cooked for a couple of minutes to cook out the bitterness of the tomatoes.  Add the sausages and then the noodles.  Finish by adding in the cheese.  Mix well.
