
Use pasta as a vessel in fusion dishes. My gluten free Mexican sausage pasta has great flavor, texture and color - 3 keys to a great dish.
Begin by heat 1/2 tbsp of the oil in a skillet. Add the sausage and cook until nicely browned. Remove the sausages and slice them. Add them back to the pan and brown again. Set aside 3 of the sausages.
Meanwhile, prepare the pasta according to the box instructions.
Add the remaining oil to the skillet. Put the onions in and cook for 3 - 4 minutes. Next, add the peppers and spices and cook for 2 minutes. Now, add in the pasta sauce and mix well. Simmer for a couple of minutes. Return the 3 of sausages to the pan and simmer for a couple of minutes. Add in the noodles, mix well and cook for 2 minutes. Finish by adding in the cheese. Cook 2 more minutes and mix well.
Serve and enjoy!
