Fiery Cheese Straws

Somewhere along the line I bought a Southern Cookbook titled Deep South Parties.  I really like this book.  It is all appetizers.  There are so many interesting recipes to try that I have barely scratched the surface in this book.  This was party of our Cajun themed birthday party (Gumbo).  These Fiery Cheese Straws are so easy to make and everyone raved about them.  So note to self, don’t tell people how easy they are to make.

You basically throw flour and cheddar cheese into the Cuisinart and pulse until it blends.  I did have to add a little vegetable oil and some water to get to the right consistency.  And I don’t think you can have enough cayenne pepper.

Recipe
Fiery Cheese Straws:
Ingredients:

  1. 1 lb of shredded cheddar cheese
  2. 2 cups of all-purpose flour
  3. 1/2 cup of softened butter
  4. 1/2 tsp salt
  5. 1/2 tsp cayenne pepper
  6. 1/2 tsp creole seasoning
  7. 2 tsp hot sauce
Directions:
  1. Process all ingredients in a food processor for about 30 seconds; don’t over process, just mix until a ball is formed
  2. Dust a surface with flour and roll the dough out to about 1/4″ thickness; cut into 4 – 5″ straws and 1/2″ wide
  3. Place on an un-greased baking sheet and bake for 8 – 10 minutes.  Serve hot.
