I have seen my wife, my MIL, my mom and lots of friends make cookie bars and I have always thought they are better than cookies. Â Then end up with a better consistency. Â I just didn’t realize it was so easy to make. Â Now, I am contrasting that to the hours I spend in the kitchen preparing meals. Â Not to take anything away from any bakers including myself, the art is in the creativity and judging the cooking time appropriately.
I jazzed up this recipe by adding butterscotch and dark chocolate chips. Â I should also mention that these were made for a school bake sale so the cause was good, and even though I doubled the recipe, I only kept a handful for my son and me.
Recipe
Chocolate Chip Butterscotch Bars(adapted from Mrs. Fields Cookie Book):
Ingredients:
- 4 cups all-purpose flour
- 1 tsp baking soda
- 2 cups dark brown sugar
- 2 cups salted butter, softened
- 2 large eggs
- 4 tsp vanilla extract
- 2 cups semi-sweet chips
- 3/4 cup butterscotch chips
- 1/4 cup dark chocolate chips
Directions:
Grease an 13″ x 9″ x 2″ pan (next time I would use a larger pan for this large of batter). Â Combine the flour and baking soda and mix well. Â In a separate bowl, blend the softened butter and sugar. Â Add the eggs and vanilla and beat at medium speed until smooth. Â Add the flour mixture in a few rounds mixing thoroughly each time and finish by adding the chips. Â Once fully mixed, do not over mix, pour into your baking dish. Â Smooth with a rubber spatula and bake for 35 – 45 minutes at 300 degrees. Â We like our baked goods cold in my family. Â So I refrigerated overnight and then cut into squares.
