I still think my favorite meal is breakfast but as I grow in my learning to cook this may be changing a little bit. Maybe that is an appreciation for the art of cooking. Â Now I do not mean that to sound like breakfast recipes are not sophisticated. Â They can be. Â I think, however, some of the best breakfast’s are the basics with a twist.
In this offering, I used my jalapeno cheddar french bread from last week (I froze it so I could pull it out for another meal or two). Â I made a sandwich with scrambled eggs, 2 kinds of cheeses and the sausage.
Recipe
Sausage and Egg Sandwich:
- Brown 2 turkey sausages in a skillet
- After the sausage is pretty well cooked, add 1/4 each of a yellow onion, red and green pepper with the sausage to pick up the flavor of the sausage. Season the vegetables with 1 tsp each ancho chili powder and smoked paprika and 1/4 tsp garlic powder.
- Remove the sausages from the skillet and add 10 beaten eggs (used about 1/2 cup of milk) to the vegetables and scramble
- When firm, add 1/2 cup of shredded cheddar cheese
- Drizzle olive oil over one side of the jalapeno cheddar bread and grill using your George Forman grill
- Assemble the sandwich by taking the bread and covering with as much of the scrambled eggs as you can; cover the 2nd piece of toast with 3 slices of pepperjack cheeese.
- Leave open face and put in a 350 degree oven for 2 minutes
- Remove from oven, add the sausage and cover the sandwich. Â Enjoy! Â
