My Easy Vegan Butter Masala is healthy, loaded with veggies and comes together so fast by using a prepared vegan butter masala sauce.
Begin by shredding the tofu into chunks. Rub with 1 tbsp avocado oil and indian spice mix. Bake in a 375 degree oven for 30 - 40 minutes. At the same time, rub the cauliflower florets with the remaining oil. Bake for 20 - 30 minutes until you get some char.
Take the final tbsp of avocado oil and add to a skillet on medium high heat. Add in the jar of vegan butter masala. Next, add in the veggies and simmer for 5 minutes. Now, add in the tofu and the cauliflower and simmer for another 5 minutes. Add in the water/stock to get the desired level of sauce.
Serve with rice and enjoy!
