Easy Vegan Butter Masala

Ingredients

  • 1 Package Tofu shredded
  • 1 Head Cauliflower cut into florets
  • 1/4 Head Red cabbage sliced
  • 1/2 Lb Green beans
  • 1/4 Lb Carrots cut in matchsticks
  • 1 Whole Red pepper cut in slices
  • 1 Jar Vegan butter masala
  • 1/2 Cup water or vegetable stock
  • 3 Tbsp Avocado oil divided

Instructions

  1. Begin by shredding the tofu into chunks. Rub with 1 tbsp avocado oil and indian spice mix. Bake in a 375 degree oven for 30 - 40 minutes. At the same time, rub the cauliflower florets with the remaining oil. Bake for 20 - 30 minutes until you get some char.

    Take the final tbsp of avocado oil and add to a skillet on medium high heat. Add in the jar of vegan butter masala. Next, add in the veggies and simmer for 5 minutes. Now, add in the tofu and the cauliflower and simmer for another 5 minutes. Add in the water/stock to get the desired level of sauce.

    Serve with rice and enjoy!
