Welcome to a culinary adventure where we combine the delicate flavors of cod with the fresh note of dill mayo rub and complimented with the smoky essence of a red pepper sauce. The recipe uses a couple of easy steps to elevate the dish which will be sure to impress. When it comes to seafood, cod stands out as a versatile and mild-tasting fish that lends itself beautifully to a variety of cooking methods and various flavor combinations.
Jump to RecipeTo begin, start by preparing the dill mayo rub. Combine a generous dollop of creamy mayonnaise with freshly chopped dill, a squeeze of zesty lemon juice, and a pinch of sea salt. The mayo not only infuses the cod with a luscious creaminess but also helps seal in its natural moisture, resulting in tender, succulent bites.
Next, the star of the show—the red pepper sauce. Roast the red bell peppers, onions and garlic until they blister and blacken. Then peel off the skin of the peppers and blend all the vegetables with a splash of olive oil to bring together. Season with some salt, pepper and smoked paprika and move to a sauce pan.
Now, it’s time to bring it all together. Place the cod fillets on a baking sheet and generously coat them with the dill mayo rub. Let the flavors meld for a few minutes before gently baking the cod to perfection. The mayo rub will form a golden crust that locks in all the amazing flavors.
To serve, ladle a generous spoonful of the luscious red pepper sauce onto a plate and carefully place the dill mayo-rubbed cod on top. Add your vegetables of choice to complete the dish. Prepare to be amazed by the extraordinary combination of flavors in this elevated cod recipe. The dill mayo rub imparts a creamy, herbaceous note, while the red pepper sauce adds a smoky and vibrant undertone. (I am writing this for the FOOD NETWORK). With each bite, you’ll experience the delicate flakiness of the cod, the richness of the mayo, and the complexity of the red pepper sauce. This dish is sure to impress even the most discerning palates.
