Cod over a Red Pepper Sauce

A little spin on my normal fish dishes with a dill mayo topping to keep the fish moist. The red pepper sauce adds a nice smoky note.

Ingredients

Cod ingredients

  • 5 Whole Cod filets
  • 1 1/2 Tbsp Old Bay Seasoning
  • 1 Tbsp Chili Lime

Mayo Topping

  • 1/2 Cup Homemade mayo
  • 2 Tbsp Fresh dill
  • 1 Tbsp Fresh parsley
  • 1/2 Whole Lemon juiced

Red Pepper Sauce

  • 3 Whole Red Peppers
  • 1 Whole Yellow onion
  • 4 Cloves Garlic
  • 2 Tsp Smoked paprika
  • 1 Tsp Salt
  • 1 Tsp Ground Black pepper
  • 2 Tbsp Olive oil

Cod

  • 5 Whole Cod filets (approximately 4 - 5 ounces each

Instructions

Red Pepper Sauce

  1. Begin by adding the vegetables to a baking tray. Drizzle with olive oil. Add to a 375 degree oven for 20 - 30 minutes. When done, add the peppers to a bowl and cover. After 10 minutes, peel the skins. Add all the vegetables and the spices to a blender. Blend until smooth. Add to a sauce pot and warm for service.

Mayo Topping

  1. Combine all the ingredients and set aside.

Cod

  1. Top the fish with the spices. Next add the mayo topping to the cod. Place in a baking dish and add to a 325 degree oven. Cook for approximately 7 minutes. Finish under the broiler for 1 minute.

    To plate, place the cod over the red pepper sauce. Add whatever vegetables on the side that you like. Enjoy!
