
A little spin on my normal fish dishes with a dill mayo topping to keep the fish moist. The red pepper sauce adds a nice smoky note.
Begin by adding the vegetables to a baking tray. Drizzle with olive oil. Add to a 375 degree oven for 20 - 30 minutes. When done, add the peppers to a bowl and cover. After 10 minutes, peel the skins. Add all the vegetables and the spices to a blender. Blend until smooth. Add to a sauce pot and warm for service.
Combine all the ingredients and set aside.
Top the fish with the spices. Next add the mayo topping to the cod. Place in a baking dish and add to a 325 degree oven. Cook for approximately 7 minutes. Finish under the broiler for 1 minute.
To plate, place the cod over the red pepper sauce. Add whatever vegetables on the side that you like. Enjoy!
