Ingredients

Making the Gravy

  • 3 - 4 Tbsp Vegetable oil
  • 3 -4 Tbsp Gluten-free all purpose flour
  • 4 - 6 Cups Homemade or store bought chicken stock
  • 1 - 2 Tbsp Igotchu Caribbean seasoning
  • 2 Tsp Oregano
  • 2 Tsp Smoked paprika
  • 2 Tsp Lemon pepper

Caribbean Spiced Cod

  • 2 Lbs Cod cut into 5 - 6 ounce portions
  • 1 Tbsp Igotchu Caribbean seasoning
  • 1/4 Cup GF all purpose flour
  • 2 Tbsp Avocado oil

Instructions

Making the Gravy

  1. Begin by heating the oil in a Dutch oven. Once shimmering, add in the flour. Stirring frequently, make sure the flour absorbs all the oil. Cook until you get to a caramel type color. At this point, I added in all my vegetables and let them simmer for 10 - 15 minutes.

Caribbean Spiced Cod

  1. Begin by patting the cod fillets dry with a paper towel. Season both sides liberal with the Caribbean seasoning. Then, lightly dredge the fillets in the gluten free flour. In a skillet, add the oil on medium high heat until shimmering. Add the cod fillets (you will need to cook in a couple of batches). Cook 2 - 3 minutes per side. You will know the cod is done when it looks like it is just starting to break apart.

    To serve, fill your bowl with as much gravy as you enjoy. Top with the cod and enjoy!
