Yes, you can cook soup in a blender. A high-speed Vitamix heats soup through friction, so about six minutes of blending turns broth, potatoes, carrots, onion and dill into a hot, smooth soup. I pour it over wilted red cabbage and roasted cauliflower for color, texture and a full meal.
Why this works
- The Vitamix heats as it blends, so there’s no simmering on the stove.
- Potatoes make it creamy without any cream.
- Roasted cauliflower and smoked paprika add texture and smoky flavor to a light soup.
My tips
- Start on low and ramp up to high, with the lid locked on tight.
- Blend until steam escapes from the lid, about 6 minutes.
- Use homemade or low-sodium broth so you control the salt.
- This only works in a high-speed blender; a regular blender won’t heat the soup.

The story behind it
Jump to RecipeCan you really cook a soup in a blender? I had to check it out with this Vitamix Cauliflower Cabbage Soup.
I was skeptical but no more. I just treated myself to this VITAMIX because my old blender needed to be replaced. Now to test it out. It is summer here in Chicago so a lot of soup ideas are going to need to wait until the temperatures cool off. I found it amazing that I ran the Vitamix for nearly 6 minutes and the soup was ready to eat. As an aside, I am still learning to work with this machine and my frozen banana shakes to start my day often leave a little of the banana not completely blended.

I do enjoy soups and have made quite a variety as you can see with these recipes:

Another aside, as I write this post, I have been celebrating my 60th birthday most of the week. It began with the generosity of my team at the office. My daughter surprised me and flew in for the weekend. Then my birthday dinner, I cooked steak and potatoes and we were joined by my son, daughter-in-law and grandson. Next day, we got to babysit our grandson as our kids went off to a wedding. We make poke bowls that night. Then, last night we all, including my youngest son, his girlfriend and sister, went to ROOH. Rooh is a Michelin star Indian restaurant in downtown Chicago. DELICIOUS!

The soup is very easy to prepare. The cabbage is wilted in a pot and set aside. I added cauliflower to the Vitamix recipe. I cut the cauliflower into florets and baked it in the oven to soften and crisp up. Next, the remaining ingredients are placed into the blender and it is blended for almost six minutes. I spiced the cabbage and cauliflower and plated in the soup for a delicious dinner.

- Use vegetable broth to make it vegetarian.
- Swap the red cabbage for green, or add roasted broccoli.
- Top with a spoonful of Greek yogurt or sour cream.

Can I use a regular blender?
You can blend it, but then heat it on the stove; a regular blender won’t get it hot.
Is it gluten-free?
Yes, as long as your broth is.
