
Using my Vitamix mixer to make my Vitamix Cauliflower Cabbage Soup. I used the recipe from the Vitamix book but made it my own.
Begin by wilting the cabbage in a pot. I used 1 cup of chicken broth instead of water to add more flavor. Drain the cabbage. Toss with half the smoked paprika prior to serving.
At the same time, bake the cabbage at 400 degrees for about 20 minutes. Toss with half the smoked paprika prior to serving.
Meanwhile, place the broth, white wine, onion, carrot, potato, caraway, dill weed, hot sauce, salt, and pepper into the Vitamix container in the order listed above. Make sure the lid is on tight. Start by turning on the maching on a low speed - 1.3. Once the machine starts, turn increase the variable speed to 10. Blend for 6 minutes or until heavy steam escapes from the lid.
Pour soup over cabbage and the cauliflower. For plating, place a a few of the florets and some of the cabbage in the center.
Serve and enjoy!
This recipe has been written for the Vitamix 5200 with Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
