I love to make salmon and my wife and I have salmon all the time. It is our favorite fish. I want to change up the way I eat it. So that could play out on changing the salmon using different spices, different cooking methods or different toppings. Or it could play out with changing up the spice.

The complimentary starches I have used vary quite a bit and so does the ethnicity of the dish. The ethnicities range from Thai, to Korean, to Southern American. The starches range from rice, to noodles to root purees. Salmon is very versatile and the options for the accompaniments are almost limitless.

The key to this dish is the pesto. The pesto adds so much flavor and flavors the beans that perfectly compliments the salmon. Using beans adds a healthy base to this dish. The pesto bean base adds a really nice texture to this dish. Even though beans are heavy, the dish is very light and leaves you feeling light.
