Jump to RecipeI love to make salmon and my wife and I have salmon all the time. It is our favorite fish. I want to change up the way I eat it. So that could play out on changing the salmon using different spices, different cooking methods or different toppings. Or it could play out with changing up the spice.
The complimentary starches I have used vary quite a bit and so does the ethnicity of the dish. The ethnicities range from Thai, to Korean, to Southern American. The starches range from rice, to noodles to root purees. Salmon is very versatile and the options for the accompaniments are almost limitless.
RED CURRY THAI SALMON OVER RICE

The key to this dish is the pesto. The pesto adds so much flavor and flavors the beans that perfectly compliments the salmon. Using beans adds a healthy base to this dish. The pesto bean base adds a really nice texture to this dish. Even though beans are heavy, the dish is very light and leaves you feeling light.

White Bean Pesto
Salmon is a staple in our house. Finding new ways to enjoy it also means finding different sides. Our salmon was served with a White Bean Pesto puree.
Ingredients
- 1/2 Cup Coconut milk
- 2 Cans Great Northern Beans
- 1 1/2 Cups Pesto
Instructions

Begin by making the pesto. See notes section for recipe.
Add the beans and the pesto to a pot on medium low heat. After simmering for 5 minutes, add the beans and pesto to a blender. Blend until fully combined. Add the mixture back to the pot. Add the coconut milk to the pot based on your desired consistency. Simmer for 5 – 10 minutes.
The white bean pesto is now ready to serve. In this dish, the salmon is served on top of the mixture. Enjoy!
