White Bean Pesto

Salmon is a staple in our house. Finding new ways to enjoy it also means finding different sides. Our salmon was served with a White Bean Pesto puree.

Ingredients

  • 1/2 Cup Coconut milk
  • 2 Cans Great Northern Beans
  • 1 1/2 Cups Pesto

Instructions

  1. Begin by making the pesto. See notes section for recipe.

    Add the beans and the pesto to a pot on medium low heat. After simmering for 5 minutes, add the beans and pesto to a blender. Blend until fully combined. Add the mixture back to the pot. Add the coconut milk to the pot based on your desired consistency. Simmer for 5 - 10 minutes.

    The white bean pesto is now ready to serve. In this dish, the salmon is served on top of the mixture. Enjoy!
