I don’t like nuts. But maybe you can mask the nut flavor.
Jump to RecipeSo why do I not like nuts? I grew up with a father who was allergic to nuts. Therefore, my mom never had nuts in the house or made anything with nuts. I would say it was psychological for me but I really do not like nuts. If I ever had a nut, mistakenly, I knew it and did not like it. It could be a chocolate chip cookie but if there was a nut in it, I could tell and I did not enjoy it.
Well, I may have found a way to enjoy nuts – a cheese sauce. How does a nut become a cheese sauce. This sounds like a joke but it is not. There are, what I will call, so many hacks in vegan recipes. The Vegans have developed recipes that imitate those items and dishes that we all remember. So many don’t translate but this faux cheese gets close. It is not hard to mimic the texture. I would say it is more difficult to get the exact flavor.
I made this dish for my daughter-in-law. She and my son were over for dinner. I made the real deal Macaroni N Cheese for the crowd, and I made, this faux mac n cheese for Elyssa and me. I love the opportunities to please and address the dietary needs of our guests (she is not a guest but you know what I mean). And did I say she is pregnant? OMG – my wife and I will be grandparents.

Vegan Cheesy Cauliflower Bake
Can you make faux cheese and love it. My Vegan Cheesy Cauliflower Bake is so good that it could fool you into thinking it is the real thing.
Ingredients
- 1 Head Cauliflower cut in florets
- 3/4 Cup Coconut milk
- 3 Tbsp Nutritional yeast
- 2 Tbsp Tapioca starch
- 1/2 Tsp Sea salt
- 1/2 Tsp Onion powder
- 1/4 Tsp Garlic powder
- 1 Pinch Smoked paprika
Instructions

Begin by steaming the cauliflower until al dente – just short of fork tender. Add to an oven on broil to get some color on the cauliflower. Set aside.
Put all the ingredients in a bowl and mix well. Next, add to a skillet or sauce pan and turn on the heat to medium high. Bring to a boil stirring constantly. Reduce to a simmer continuing to mix. Keep stirring until the sauce becomes stretchy. This should only take a minute or so. Remove from the heat.
Quickly add the cauliflower and cheese sauce to a baking dish. Place in a 350 degree oven and bake for 10 minutes to let the dish come together.
Remove from the oven and serve. Enjoy!
