Vanilla Peanut Butter Chocolate Chip Cookies

This was my second foray using peanut butter in a cookie recipe.  The Vanilla Peanut Butter Chocolate Chip Cookie Bars were such a hit, I had to try it again.  For those that read the last post, know I did not taste them or breath while I was making them.  I have just never like peanut butter but why deprive my family from a great dessert.  This time I again used the vanilla peanut butter to make these Vanilla Peanut Butter Chocolate Chip Cookies.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup (2 sticks) butter, softened
  • 1/2 cup vanilla peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 3/4 cups (11.5-oz. pkg.) semi-sweet chocolate chips

Directions

PRE-HEAT oven to 375° F.Combine the flour and baking soda in small bowl.  Beat butter, peanut butter, granulated sugar, brown sugar and vanilla extract in your mixer using the paddle attachment. Beat in the egg.  Gradually beat in flour mixture.

Stir in chocolate chips by hand.  Using a small ice cream scoop, drop the dough onto baking sheets sprayed with vegetable oil.

Bake for 8 to 10 minutes.  Cool on baking sheets.

    I like that this recipe is straightforward, not fussy and of course, the peanut butter.
