With all the cooking I am doing, I really need to eat more lite fare. Â A basic tuna sandwich is a good start but it still has to be good. Â I like adding red peppers to give it more crunch and a little bit of color.
Recipe
Tuna Salad Sandwich:
- For the tuna, I use 3 cans of white albacore in water; Â rinse and drain well; Â in a bowl, add 1/4 cup of lite mayonnaise, 2 tbsp sweet & spicy mustard and 1 tsp of lemon juice
- Next mix in 1 1/2 stalks of finely chopped celery, 2 slices of finely diced yellow onion and 1/4 of a red pepper diced
- Add 2 tsp each of celery salt and ground black pepper and 1 tsp salt
- To assemble the sandwich take 2 slices of Italian loaf bread, 1/2 piece of romaine lettuce and as much of the tuna salad as you like
