Tuesday’s Tip – Creaming & Softening Butter

This will be a shorter post than most but I hope a very valuable post.  There are many baking recipes that call for using softened butter.  How many times have you started to make one of these recipes and it called for softened butter.  Do you know how long it takes to soften butter?  Hours – 3 – 4 hours.  So what do you do when you don’t have that kind of time?  Please don’t tell purist bakers (this is only a substitute not a method if you have the time).  Use your microwave.  Use your microwaves defrost setting.  That’s right.  The defrost setting.  You won’t need more than 30 seconds.  Here is what the butter looked like after this defrosting.

With the butter softened, it can then be creamed.  Creaming butter simply means using a mixer and beating the butter until it becomes fluffy.  As you can see from the picture below, you can see how the butter looks creamy.
