Tiramisu Bread

I saw this recipe from a fellow blogger named BakerStreet.  This sounded great and after reviewing the recipe, I knew it would be fairly easy.  I got real kudos from my wife on this recipe.

Recipe
Tiramisu Bread:

  1. Pre-heat oven to 350 degrees and grease a 8.5″ x 4.5″ loaf pan
  2. In a medium mixing bowl, whisk together 1 1/2 cups of all-purpose flour, 1 tsp baking powder, 1/2 tsp of baking soda and 1/4 tsp salt, set aside
  3. In a small mixing bowl, mix 2 tbsp cocoa powder and 2 tsp of instant coffee
  4. In a large mixing bowl, mix 8 oz Mascarpone at room temperature with 3/4 cup of sugar and beat for approximately 3 minutes until fluffy; 
  5. Then add 2 eggs one at a time and when you put in the 2nd egg add 1 tsp vanilla
  6. Finish by alternately adding the flour and 1/2 cup of buttermilk being sure to finish with the flour
  7. Pour 1/2 of this mixture in your loaf pan and then mix the remaining 1/2 with your cocoa/coffee mixture and pour on top of the 1/2 half of the batter;  take the back end of a spoon and create swirls by gently pulling the the bottom mixture up and weaving it with the top layer
  8. Bake for 42 – 45 minutes
  9. Allow to cool 15 minutes and place on a cooling rack
  10. I added 2 tbsp of Bailey’s – make sure to poke a bunch of wholes in the cake so the Bailey’s soaks in
  11. I also added a vanilla glaze – in a mixing bowl, simply take 1 cup of confectioner sugar, 1 tsp vanilla and 2 tbsp fat free 1/2 & 1/2 and 1 tbsp of skim milk; drizzle over cake
