Tilapia with Tomatoes & Artichoke Hearts

If your pantry is filled with good stuff, you can always throw something together with a little bit of creativity in a short amount of time.  Last night, I literally pulled this dish off in 15 minutes.  I walked into my house and had 30 minutes before I had to leave for an appointment.  My wife had run to the store.  So I walked into the house and looked in the fridge to see what she had bought.  It was fresh Tilapia.  I quickly placed my large skillet on the stove top and turned the heat on to medium high.  I ran upstairs to change (this may be too much detail but I am showing the overall coordination needed to multi-task in the kitchen).  Came back down, seasoned the fish with Old Bay seasoning and started the cooking process.

Recipe
Tilapia with tomatoes and artichoke hearts:

  1. Seasoned 3 fillets with Old Bay seasoning liberally applied
  2. Put into pre-heated skillet with 2 tbsp olive oil on medium heat
  3. Seared 1st side for 3 minutes and flipped before adding other components
  4. After 1 minute added 1 – 14 oz can of diced tomatoes with garlic and onions and 1 – 14 oz can of artichoke hearts with liquid included.  Brought heat up to a boil then reduced to medium heat
  5. Added approximately 1 tsp each of salt, pepper and oregano and cooked for about 5 more minutes
