Slow Cooked Chicken with Vegetables in dried chili broth

This is a big day for this blog.  The blog has been hijacked – by my wife.  She does not want the limelight.  She was up at like 4:30am putting the finishing touches on her slow cooking adventure.  The only contribution I made was to suggest that she add dry chilis to the cooker.

Recipe
Slow Cooker Chicken:

  1. Dice purple onion, red and yellow peppers, leek, carrots, potatoes and celery and place in the slow cooker
  2. Add 2 cans of condensed chicken soup; 1-2 cans water; 8 oz of chicken stock; 2 dried red chili; 1 tsp each of salt, pepper, paprika and ancho chili pepper
  3. Finish by adding one package of split kosher chicken (4 1/4 pieces)
  4. Cook for at least 4 hours and serve
