Tacos

My son, who will be a senior in college and living off campus, wants to learn how to cook.  This is actually more about survival than bonding or leveraging my knowledge.  But I will take it.  I want to teach him some basics that can carry him for awhile.  By teaching the basics of browning meat, I have set him up for a few things including a simple spaghetti with meat sauce.

Recipe
Tacos – ground turkey:

  1. Heat a skillet over medium high heat, add 1 tbsp olive oil and 2 lbs ground turkey and brown, remove from stove and drain
  2. Diced 1/4 of a yellow onion and 1 jalapeno pepper and saute with 1 tbsp olive oil for about 5 minutes – until softened
  3. Return meat to pan and add 1 tbsp each chili powder, season salt, ground cumin and oregano and mix well
  4. Add one 7 oz can of salsa casera and one 14.5 oz can of diced tomatoes with green chilis and cook for 3 minutes
  5. To serve, grab a hard taco shell and assemble with taco meat, shredded Mexican cheese, lettuce and tomatoes.
