Now what man does not like mashed potatoes? Â Certainly, every man in my family feels mash potatoes are a health food and required eating. Â I do not know where these ideas come to me but I dream, and constantly daydream, about different dishes to create. Â I thought that adding some sweet potatoes to the traditional russet potatoes would add a nice twist and a sweetness possibly requiring less butter and stuff.
This was a concept that turned out even better than I imagined. Â The sweet potatoes added a second level of taste while eating the potatoes. Â I made them more like a traditional mashed potato than a sweet potato – no brown sugar added.
Recipe
“Sweet” Mashed Potatoes:
- Cube and peel 2 sweet potatoes and 6 russet potatoes
- Add to boiling water and cook until fork tender
- Drain, return to pot and puree with a hand mixer
- Add 1/2 cup of whole mile and 1/4 of heavy whipping cream to a sauce pan and simmer with 2 tbsp butter
- Slow add to the pureed potato mixture
- Add 2 – 3 tbsp Lawry’s seasoned salt and pinch of salt and 2 pinches of pepper and mix well.Â
