Susie Q’s Chocolate Chip Banana Bread

I talk about my wife a bunch on this blog whether she wants me to or not.  My wife is the true baker in this family (although my daughter is giving her a big run for her money) but she has rarely contributed to this blog.  She is so modest.

Well, you have heard about the boys swim team dinner by now.  We needed some goodies for the boys and that is where this recipe comes in.  My wife wanted to make sure that I credited the original source – now known as the Recipe Connoisseur and known to us as Susie Q.

Recipe
Chocolate Chip Banana Bread (adapted from the REConisseur):
Ingredients:

  • 1/2 cup softened butter
  • 1/2 cup of sugar
  • 1 egg
  • 3/4 tsp baking soda
  • 1 1/2 cup of all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 4 large, very ripe bananas mashed
  • 9 oz chocolate chips
Directions:
Pre-heat oven to 350 degrees.  Grease a loaf pan.  Mix butter and sugar and add the egg.  Separately, sift all the dry ingredients and add to the wet ingredients.  Add the bananas, chocolate chips, mix well and pour in to loaf pan.  Bake for 50 – 60 minutes.  Use a toothpick and make sure it comes out clean.  Enjoy!  Thanks Susie.
