A weekend or so ago, I was in the cookie making mode. I am also participating in the Great Blogger Cookie Swap. This is a really nice idea where bloggers make cookie recipes for fellow bloggers. My wife walked in the house shortly after I made these Sugar Cookies. Little did I know that these are her favorite cookies. She told me my cookies were perfect. My wife would know because she is the true baker in this house. I am just an impostor – a learning impostor. I have to tell you though, that there might not be an easier cookie than a sugar cookie. Also, how can you not love them. They are just butter and flour with vanilla added in. I love the way the cookie looks with its little cracks. So delicate.


- 1 cup (2 sticks) butter, softened
- 1½ cups granulated sugar
- 1 egg
- 2¼ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon Kosher salt
- 1 teaspoon vanilla
- ¼ cup granulated sugar for rolling cookies
- Preheat oven to 350º F. Spray cookie sheets with nonstick spray.
- Cream together butter and granulated sugar until light and fluffy, 2 - 3 minutes.
- Add the egg and mix until well-combined.
- Stir in flour, baking powder, salt, and vanilla. Combine fully but lightly.
- Scoop cookie dough using a small ice cream scoop, and then, roll into a ball.
- Pour granulated sugar in a large bowl.
- Take each ball of cookie dough and roll it in the granulated sugar until the whole ball is covered. Place cookie dough onto baking sheet - leave a couple inches between cookies.
- Lightly press each cookie down. Bake for 8 to 10 minutes or until lightly browned.
- Serve and enjoy!
