My wife is really beginning to appreciate my creativity. Â Not how you would think. Â It is in my use of leftovers. Depending on how you look at this can be a positive trait or a negative trait. Â For better or worse, I picked this trait up from my father. Â You could also say that I make my own version of Food Network’s Chopped. Â I like to go into my fridge and see what I have from last night’s dinner.
Now, I won’t say that this is so creative. Â It was just good. Â I made this on a weekend, and when my wife got home from coaching mid-afternoon, she asked what we had in the fridge. Â I pulled out this Sriracha Chicken Salad and she just loved it.
Ingredients:
- 2 chicken thighs (mine was Fried Chicken from the night before)
- 1/4 cup of mayonnaise
- 2 tbsp Sriracha sauce
- 1 1/2 – 2 stalks celery, diced
Directions:
Remove the skin from the chicken and dice. Â In a separate bowl, mix the mayonnaise and Sriracha together until combined.
Add the chicken to the sauce. Â Now, dice the celery and add to the chicken and Sriracha sauce.
Mix well. Serve on a piece of red cabbage.

My son got us to keep the Sriracha in the house. Now, I don’t know why I didn’t find it sooner. It is not as spicy as people say. Adds flavor with just enough spice.
