I made this Mousse Layer Cake with my daughter. Â Bummer, she has gone back to school. Â This dessert was the evolution of an idea that began with an idea to layer a whole bunch of chocolate with wafers but no real goal for the end product. Â My sous chef, which is selling my daughter short, did a lot of the production of this dessert. Â Don’t say I didn’t give you an adequate shout out. Â “You are the best!” Â Now the whole world knows too!
Oh yea, the dessert. Â What do you get when you start with a layer of crumbled Oreos; followed by a layer of chocolate ganache; topped with a wafer; topped with raspberry jelly and finished with a layer of chocolate mousse? Â Deliciousness!!!
Ingredients:
- 1 Bag of Double Stuff Oreos
- 1/4 – 1/2 stick of butter, melted
- 2 bags of semisweet chocolate chips, divided in half
- 1 cup of whole milk or half & half
- 1 sheet of wafers
- 1/2 jar of raspberry jelly
- 2 tbsp butter
- 2 large egg yolks
- 1 1/2 cups heavy cream
Directions:
Melt the butter in the microwave. Â Meanwhile, crush the Oreos with a masher. Â Crush but do not make to fine.
Add the butter to the Oreos and mix well. Â Take a muffin tin and place about a 1/2″ layer on the bottom.
Next, over a pot of boiling water, fill a bowl with 1 bag of the chips and the whole milk. Â Stir constantly until the chocolate is melted and fully absorbed into the milk. Â Remove from the heat. Â Let mostly cool. Â Pour approximately a 1/4″ layer over the Oreo layer. Â Next, find a biscuit cutter or something with a circular diameter similar to your muffin tin and cut out circles of the wafer. Â Top the wafer circles on top of the chocolate ganache layer.
The next step of the assembly is to add the jelly. Â Be as generous as you wish but be sure to cover the wafer.
For the mousse, start by melting the butter and 1 bag of chocolate in a microwavable bowl. Â Should take 30 – 45 seconds. Â Whisk in the eggs. Â In a chilled mixing bowl, add the cream and mix with the beater attachment on medium high to high speed until stiff peaks are formed. Â Fold the cream into the chocolate.
Folding means gently stirring in the whipped cream, not mix, and you literally fold it into the chocolate over and over until the whipped cream is fully incorporated into the chocolate. Â Finish the mousse layer cake by adding the mousse on top of the jelly. Â Sprinkle some more Oreos on top.
Serve and enjoy!
This looks like something that will be wiped out in my house, am not that crazy about chocolate, but who does not like chocolate, perfect size. My teen would love it.
